The National Curriculum requires schools to be cooking predominantly savoury dishes and to move away from focusing on baking cakes and biscuits. The small serrated knife in this list has been chosen for its size (8cm blade) and for it's suitability in the classroom. The chopping boards are very durable and high density material is better to cut on than cheaper hard plastic. Glass mixing bowls are advised for demonstration purposes but it is safer for children to use polypropylene. The rigid white polystyrene trays are useful for gathering ingredients together when setting up the cooking activity and also to place prepared ingredients in the fridge.
